It’s not just about what happens when making cheese, this is about supporting a local international award winning, cheese passionate business.
We spent two hours learning the process of how artisan cheeses are made.
This small company is basically self substantial, learning how the milk from “local” cows, sheep and goats make these delicious cheeses is definitely worth a visit.
From beginning to end the passion Steve has for cheese is obvious and he genuinely passes this on.
At the end of the tour we got to taste test the different cheeses and there really is something for everyone’s palate.
It was fantastic to learn exactly how much goes into making a local cheese.
To make this experience more enjoyable everyone on the tour interacted, thank you a truly wonderful day.

Went to their Christmas opening and were enthralled by the range of cheeses and personal guidance of Kirstie. A great set-up & wonderful cheeses bought.

For a few years, I've bought most of my cheese here. It's in walking distance down the country road, so a quarter of a wheel of cheese is a good price compared to the supermarkets. They've always had the time to spend to talk with me about my tastes and to try things. Occasionally staff can be thin on the ground, but it's worth the wait.

We were gifted a tour of the High Weald dairy for Christmas and booked a slot on 9 January.
It was one of the best tours of this sort we have done even though there was no actual cheesemaking going on.. It was relaxed and very informative. There were about 9 participants and Steve, the host, really knew his stuff and the business. With all our many questions and Steve's input the tour lasted much longer than advertised. There was a tasting to finish with, then an opportunity to buy some of the products, but no pressure to do so. We had also received one of their cheese hampers for Christmas - but we still bought more!!
Thoroughly recommend the tour and the cheese.

I tried the Truffle Ewe (at their pop-up stand at Coolings). I'm not even a particular fan of sheep's cheese but the cheese was just breathtakingly good. The gentleman selling the cheese was informative, funny, helpful, polite, and just good value. I can't praise the cheese highly enough. And they do cow cheese as well, not just sheep and goat.

A full day cheese making course at the High Weald Dairy, the Sistine Chapel of cheese. What a wonderful birthday gift. A lot of preparation work had been carried out by Gary, Sarah and Mark before we arrived so the day just floated by on a sea of curds and whey. They made it look and sound so easy but the skill and devotion to their art has produced some outstanding cheeses. Every need was catered for, a full range of ingredients and equipment plus detailed guidance. Then to complete the experience a delicious lunch. We came away with the produce of our days work which is, as I type, resting on the garage shelf where it need to mature for three months.

We have bought a number of varieties of High Weald Cheese over the years and decided to go to an Introduction to Cheesemaking. It was a good decision. We received a warm welcome from Sarah on arrival. Chris and Gary led us through a whistle-stop day of soft and hard cheesemaking. The day included a tour of the dairy, cheese tasting and an excellent lunch (thank you Gary).
As there were two of us on the course we came away with around 1kg of hard (cheddar style) cheese to mature at home, 8 pots of various flavoured soft cheese, some halloumi and about ½ litre of whey for use in baking. We couldn’t fault the day. Sarah, Chris and Gary provided a great experience, an insight into the ethos of High Weald Dairy and an excellent introduction to the art of cheesemaking.
As there were two of us on the course we came away with around 1kg of hard (cheddar style) cheese to mature at home, 8 pots of various flavoured soft cheese, some halloumi and about ½ litre of whey for use in baking. Interested in food,and inparticularly cheese? Then this is a course you should attend.
We had a fantastic day with a great team. Our tutors,Chris and Gary,were very passionate and knowledgeable about cheese.They ran the day like a well oiled machine, answering any questions we had.The number of people on the course was just right.We made a hard cheese and a soft cheese.to take home.
The lunch, prepared by Gary was a big hit,making the day well worth the money.
Many thanks to Sara, mark,Chris,gary and the rest of the team for a fantastic day.

Really enjoyed our day! Chris clearly is a very knowledgeable and experienced cheese-maker and is very engaging. Both Chris & Gary obviously enjoy their craft and it made for a great day with a very tasty lunch cooked by chef Gary.
We learnt a huge amount about cheese and the complexities of making it and we managed to make 5 cheeses ourselves plus some halloumi made by Gary, all of which were delicious!
I would recommended this course as it’s well run, good value for money and fun!
